In a trade often accused of over complicating things it’s with great pleasure that I introduce you to a wine that does exactly what it says on the tin. There is little more to say about this wine that isn’t already explained in its name or expressed visually on its label: Beefsteak Club Malbec. The wine itself is fruity, freshly and fresh, very drinkable if a little 2D but being on offer at £6.66 when you buy two from Majestic certainly adds something to the flavour!
Try it with steak, obvs (!) and fancy it up a bit with this sauce-au-poivre recipe from our friends at Ginger Jar Food. That’s dinner sorted.
Sauce au poivre: serves 4
1 tablespoon butter
10g of black peppercorns
2 tablespoons of Cognac
100ml of double cream
200ml chicken or veal stock
2 teaspoons of Dijon mustard
Salt to taste
* Fry the peppercorns in butter in a sauté pan.
* Add the Cognac and flambé off the alcohol.
* Add the double cream and mix well with a whisk and allow to reduce a little, then add the stock and allow to reduce and colour until rich and deep.
* At the last moment, whisk in the mustard and adjust the seasoning with salt – serve straight away.
